Our pizza is not a traditional round pizza shape, instead it is made in rectangular pans and cut into squares or rectangles.
The crust is thick and airy with a crispy crunch finish.
We use a cold fermentation process to allow the gluten to build, and the dough is left to rise in the refrigerator for anywhere from 24 hours to 72 hours.

It’s usually thicker than what you’d get with a Neapolitan pizza. We’re talking crispy on the outside, pillowy on the inside. Think of it as the mattress of your pizza dreams.
